Shepherd's Pie
Ingredients
- carrots 2-3
- lamb, ground 1.5-2 lbs
- onion 1 large
- tomato paste 1-2 tbsp
- beef stock 2 cups
- all-purpose flour 1-2 tbsp
- potatoes 4-5
- egg yolk 1-2
Intro
Substitute beef to make a cottage pie. Go for 90%+ lean.
Directions
- Make the potatoes into a mash, incorporating the egg yolks. Do not make a silky mash for this purpose. Do this ahead of time and let it cool down and set.
- Brown the lamb in a large stainless steel pan. Cook thoroughly, until the fat has cooked off and the meat has color on it. In the meantime, grate your onions and carrots.
- Add the veg to the pan to incorporate. Add the tomato paste (optional) and cook it off for 1 minute.
- Add flour and form a roux with the fat in the pan. Then ladle in the stock to form a gravy. Simmer the concoction down until nearly dry, and season to palette.
- Place the meat into a casserole dish and allow to set. Add the mash potato on top, making sure to cover the meat entirely. Pat down with a knife or spoon to make a pleasant pattern.
- Cook in a preheated oven at 400 degrees for about 25 minutes.
