Grilled Chicken Hearts

Directions
- Generously season the hearts with salt. Let them dry-brine for at least 15 minutes.
- Assemble them on skewers and heat on a hot grill for about 4-5 minutes per side.
- Move into the indirect heat to finish cooking, about 15 minutes.
Notes
Crispy on the outside, chewy on the inside. Don’t tell your guests what it is until they try one.
