Potato Pie

Intro
Nobody asked for this, but everyone wants it. Goes great with some gravy.
Directions
- Peel 3-4 potatoes and rinse them. Grate them, then squeeze out as much of the water as you can.
- Preheat your oven to 450, then add the potatoes to a pan with oil. Cook until the grated potatoes have dried up a bit.
- Place them into a pie pan and allow to cool until you can handle with your hands. Shape the grated potatoes into a pie crust by pushing them down against the pie tin.
- Place in the oven and roast until crispy and golden-brown, approx 25 minutes. Keep an eye on it.
- In the meantime, peel 3 more potatoes and chop into chunks. Place in water and boil for 15-20 minutes, until soft.
- Using softened butter and milk, make a mash, adding garlic if desired. Season with salt and pepper, using a little extra salt to compensate for the other unsalted parts. Set aside.
- Peel 2 more potatoes and slice using a mandolin. Toss with olive oil.
- Assemble the pie. Once the crust is crispy, add in the mashed potato, tamping down gently and evening out the surface.
- Carefully layer the potato slices in a lattice, like scales, atop.
- Roast until top layer look brown and crispy, approx 30-40 minutes.
- Let cool and enjoy.
