Subbing with arugula can give it a strong kick, so I cut the garlic in half when using it. This recipe works really will with a seared chicken breast or fillet of salmon.   • brown mushrooms 12
  • thyme 1-2 sprigs
  • shallots 1 small

Directions

  1. Heat the sauce and peel the mushrooms. Chop into small dice and cook out the water content.
  2. Add finely diced shallots and thyme and cook through until soft.
  3. Mix into the sauce until smooth.

Notes

This sauce can thicken fast when you add the mushrooms. Be prepared.
