Pan-Seared Steak

Better and cheaper than going to a steakhouse. Bone-in cuts are the best

Directions

  1. Get the steaks out and let them come to room temperature. Similarly, bring the butter out to soften.
  2. Pat dry, and season with salt and pepper. Do this in advance to bring out the moisture.
  3. When ready, heat a stainless steel pan on high. Add a mixture of oil and butter to raise the smokepoint.
  4. As soon as a wisp of smoke is seen, place the steaks in the pan. Smash the garlic in its skin, and place them into the pan. Seer for 3-4 minutes and flip. Seer for another 2 or 3 minutes.
  5. Place the garlic cloves atop the steaks, and baste them with the oil/butter in the pan. Seer for another minute or so, then turn the steaks on their side to render the fat.
  6. Remove from the heat and let rest. Consider making a pan sauce.
