Pan-Seared Steak
Ingredients
- beef, delmonico steak 2
- garlic 2-4 cloves
- butter 2 tbsp
- olive oil 1 tbsp
Intro
Better and cheaper than going to a steakhouse. Bone-in cuts are the best
Directions
- Get the steaks out and let them come to room temperature. Similarly, bring the butter out to soften.
- Pat dry, and season with salt and pepper. Do this in advance to bring out the moisture.
- When ready, heat a stainless steel pan on high. Add a mixture of oil and butter to raise the smokepoint.
- As soon as a wisp of smoke is seen, place the steaks in the pan. Smash the garlic in its skin, and place them into the pan. Seer for 3-4 minutes and flip. Seer for another 2 or 3 minutes.
- Place the garlic cloves atop the steaks, and baste them with the oil/butter in the pan. Seer for another minute or so, then turn the steaks on their side to render the fat.
- Remove from the heat and let rest. Consider making a pan sauce.
