pasta dough
Ingredients
- all-purpose flour 2 cups (240 grams)
- eggs 3
- sea salt 1/2 tsp
- olive oil 1/2 tbsp
Intro
Basic pasta dough. Lots of room for variation, but this is a good starting point for spaghetti, linguini, ravioli, etc. Helpful to have a pasta machine to roll it out afterwards. Measure the flour with a kitchen scale; you’ll thank yourself.
Directions
- Mix flour and salt into a bowl. Create a well and pour in oil and eggs. Beat with fork and slowly work in surrounding flour.
- Place some additional flour into your hands, and begin mixing it together in the bowl. Once it is cohesive, pour out onto a lightly floured surface.
- Flour your hands, and knead into a dough for 6-10 minutes. Do not over-knead.
- Cover with plastic wrap and leave to rest at room temp for 30-60 minutes.
- Split into 4 portions and roll to desired size.
