Seared Duck Breast

Directions

  1. Season duck with salt and pepper on the meat side, and lightly score on the skin side, being careful not to pierce the fat deeply. Heat a stainless steel pan on a low flame with a touch of olive oil.
  2. Place the breasts gently into the pan, skin side down. Keep the heat nice and low, and let the fat render. This can take upwards of 20 minutes, but keep an eye on it.
  3. Once the fat is rendered enough that the heat is beginning to penetrate into the breast, remove the breasts from the pan. Turn the heat high, and let the pan heat up. Once it is hot, turn the heat off, and carefully place the breasts skin side up into the pan.
  4. After about 20-30 seconds, remove them from the heat. Allow them to cool for at least a couple of minutes.
